I made my own Korean Kimchi

I made my own Korean Kimchi. It is a fermented vegetable, which is very healthy. I mix it with fresh fruits. This is the recipe I used: http://drbenkim.com/how-make-kim-chi.htm

Tasted it!!! I have already finished half of it. :-D

I mix it with fresh fruits in the morning, afternoon and evening.

I have been eating it since Sat 4th July every morning and at least another time with lunch or dinner. Nothing has happened. Really first I was scared.

I didn't know kimchi at all, in fact. Quite unknown in France. I would be curious to taste but I never dare to make it myself.

Lost 1 pound. To reach my goal, need to lost 2 more in 3 weeks. YES I CAN :lol:

You will lose 2 more pounds in 3 weeks if that is what you want. If there is a will, there is away.

You can buy kimchi in Korean and Chinese shops, which must be a lot in France especially in Paris if you live in Paris.

We have a large and old Chinese migration (and from Cambodia and Vietnam) but Korean I am not sure. But I read that recently, our French Master Cook discovered Kimchi and tried to introduce it in their menus. So perhaps one day kimchi will be fashionable here and we could find it easily.

That was the thing for quinoa : few years ago no one ever head about it, and now it is the fashionable free gluten meal.

The following is a video show of making kimchi. This is just as an educational. The other recipe is better. It doesn't use sugar, it uses fruit like apple instead. This lady seems to be expert but misses something very important. She doesn't mention why the cabbages have to be soaked in salted water and the fact that cabages shrink a lot when soaked in salted.
