A Kurdish Restaurant!

Hey! My family wants to start a Kurdish style restaurant in my city - Bergen... I will be given a promonent role - and will be in charge of the interior and other such things! I wanna travel to Northern Kurdistan to get some things for the decoration and styling of the dining areas...

And Well - I simply wanted to ask you if you have any ideas about the food, atmosphere or anything else related...

It would be great if you shared your ideas with me about a concept and style - I just wanna compare and try to get a broader range of styles to go for...


And by the way - Do you think it is true that Kurds are less supportive of other Kurds in foreing society!!?? (e.g - that no Kurds would come to our restaurant)

The restaurant will be named "Kardox" - meaning Kurd... But it will not be a place for politics - and Kassem - I am not sure you have been to a real restaurant yet - because restaurant means EXCLUSIVE food.. not kebabshops... that is called junkfood...


I have already thought about the picture you are talking about... it is off course where the Kurdish flag has its origin... and frankly I think we will not do anything that is political - We want ALL people to be able to come without being offended...

The Menu will be varied and have 5 catagories of food and a dèsert menu a alchohol and a non-alchohol menu -

The 5 catagories will be: Lamb , Chicken, Beef, Fish and Vegetarian... all these menues are served with "Jajik"("Tzhatzhik"- same as the greek) - "Levashe" (bread) "Xiyarmast" (Youghurt with cucumber and herbs)...


We want to have "Fanos" (oil lamps) in the sieling instead of ornidary lamps and we want to have other Kurdish effects...

VLad - Yes surely - We are not gonna discriminate...

My Friend isn't Xiyarmast the same as Tzatziki? Both Yoghurt with cumcumbers??

What kind of music you are going to play? More Norway like? Or Turkish/Kurdish/Arabic music?

Vlad -from what I have eaten in Greek restuarants Tzhazhik is dry... - well not dry - xiyarmast is wetter... and I think there is a profound difference... the taste of Xiyarmast is somewhat more dominated by cucumber... Tzhazhik is more herbish :D Lol

Hmm I like to trie xiyarmast. Can you only get it in Kurdistan and Norway? :lol:

You know what??? It is the MOST simple thing to make... The recepie we use is - You have to either make your own youghurt or buy naturall yougurth - and than you slice up cucumber and oniongrass -- do you know wich one it is?? the oniongrass... it is the loong grass that grows from the onion! Anyway - you slice them into SMALL pieces and throw them into the bowl of yoghurt -along with salt and herbs that you like - coriander and such.. pepper-- and what have you... just pick and choose... :P Really easy to make...

i want kurdish resturant.. in oslo! whit dolma and kurdish køfte ,hurok,tapsi.... MMMMmmmmmmmmmmm. every thing,,, every body have lamb and chiken......

when i tell people about it they get wather in the mouth.......

i think traditional kurdish food, the atmosphere is very important...decorate the place with "histroical" kurdish items......like the long smoking pipes..the hand made bags...ect...ect...snice ur a designer u could even frame kurdish clothing and adron the walls with it

well....thats tricky some are...they get jealuos u know.....but i would definatley support any kurdish bussiness !

YOU ARE FABIOULUS! Thank you SO much... I wanna do that - I was thinking of making nice costumes for the vaitors and vaitresses! :D And the smoke pipes and RUGS on the walls - and we will have nice Kurdish music - with "miskember" burning - "Uzelîk"!
And the food will be homemade and traditional.

I have a politician friend he is the "Citycounslor of Finance" and he is one of the most powerfull people in Bergen - he will come and open the restaurant! And we will invite media - and maybe even a local tv... We'll see :roll:

I am thinking of having live music at the opening - any of you got ideas for what type of instrument would be suiting??? I was thinking of: Tar, Tembûr and a type of flute... Any tips?



Any of you have the chance to come to the opening??? Hahahaha :lol:

I have some friends who goes fishing in Norway, but I don't know he is near you. Norway is really beautiful.

That's good - The nature here reminds me of Kurdistan - they have the same young mountains - but here they are mostly covered with forrests--- I live in Bergen - Where do they go fishing? There are ALOT of good fishing spots on the eastern parts of Norway - but then again there are many godd places where I live too.. could you check that??? And are they Kurds???

Hey by the way - the Restaurant is due to open late August!

yea thats a cute idea....but it would be too much of a hassle..maybe the opening week they could all wear colorful dresses

No dear - I'll fix all an make the needed preparations... Just need to find me a Kurd competent with a musci instrument - And anyway - uzelik I would have burnt in any case - it will keep NAZAR away from our restaurant... Some people are REALY jealuse--- And the evil eye is lurking in the shadow...

SO - the costumes will be made with Kurdish style... Sorgul - Where in Kurdistan are you from??? Do you have any good recepies where your from?
